No waste citrus cake

This is the easiest cake in the world to make and tastes great! It be be made with any citrus fruit available at the time and it uses the whole fruit - including the skin so the only thing that ends up in the compost bin are the seeds and the egg shells.

The pieces of skin throughout the cake provide tang and texture. Cumquats are sweeter and lemon has more tang - but each adds its own personality to the cake.

Depending on taste different sugars can be used, or honey if preferred. The type of flour is also flexible, and this gives it a different taste accordingly. Another option is to add seeds for a crunchier texture such as amaranth, sunflower, poppy or sesame.

Ingredients:

  • Approximately 150g of citrus fruit

  • 180g melted butter

  • 3 eggs

  • 1 cup sugar

  • 1 1/2 cups self raising flour






Method:

  • Wash the fruit well, before drying and cutting up into smallish pieces. Remove seeds.

  • Blend fruit roughly so that it still retains some pieces in the mix.

  • Gradually add the butter, eggs, sugar, flour and optional seeds and blend through.

  • Pour into a greased loaf or cake tin and if desired sprinkle the top with a few seeds

  • Bake at 180 degrees (not fan forced) for about 40-45 mins

  • Cool on a cake rack and ice if desired.
