Garden fresh salsa

Salsa literally means "sauce" in Spanish and is an opportunity to creatively blend the many flavours of seasonal herbs to create a sauce that can be used as a side salad or a topper on tacos, meats, vegetables or pretty much anything!


Ingredients:

  • About 6 - 8 chopped tomatoes

  • Can of diced tomatoes (optional)

  • One bunch of coriander finely chopped (including the stems)

  • 1/2 bunch finely chopped garlic chives

  • 1 small onion finely chopped (red onion is sweeter but use whatever you have)

  • The juice of 2 limes or other citrus

  • Chop fresh chili to taste

  • Salt and pepper to taste

  • Experiment with adding other tastes from the garden such as mint, basil, parsley, lemon balm. nasturtium, mustard leaves, shredded radish or leaves.


Method:

Mix ingredients together and season. For a smoother consistency blend half the mixture and then mix it back through. Store salsa in jars in the fridge for up to a week.
